Recipe:
1 lb sausage (breakfast sausage, chorizo, bacon, ham, etc.)
½ large onion
3-4 garlic cloves
6 eggs
1 cup heavy cream (can use half and half or milk)
½ tsp salt
½ tsp pepper
½ -1 tsp dried herbs (rosemary, oregano, basil, etc.)
10 ounces frozen hashbrown pieces
1-2 cups cheese (cheddar, mozzarella, parmesan, feta, etc.)
Extras: bell peppers, mushrooms, tomatoes, spinach, etc.
Instructions:
1. Brown sausage, drain grease, set aside
2. Dice onion and mince garlic
3. Mix eggs, cream, and seasonings, set aside
4. Lubricate your 9”X9”baking dish
5. Layer your ingredients, hashbrowns, sausage, vegetables and half the cheese
6. Gently pour your egg mixture over top
7. Sprinkle the remining cheese on top
8. Cover with aluminum foil and bake in a preheated 350F oven for about 35-40 minutes
9. Remove foil and bake an additional 10-15 minutes, or until center is set and cheese is golden brown
