1 large eggplant
3/4 cup panko
3/4 cup breadcrumbs
2 eggs
Plain flour
salt
Marinated Capsicums
1 yellow capsicum/pepper
1 red capsicum/pepper

1 cup fresh basil leaves
3 tbsp pinenuts
½ garlic clove

½ cup parmesan cheese (reggiano or pecorino)
Burrata or fresh mozzarella
Ciabatta
Rocket (arugula)
