Recipe:
1.5 lbs carrots
½ large onion
2 tbsp butter (omit butter if you want to make vegan/vegetarian)
4 tbsp olive oil divided (half to roast and half to sauté)
3-4 garlic cloves
½-1 tbsp ginger
½ tbsp paprika
2 ½ cups vegetable stock
½-1 tsp salt
½ tsp black pepper
½ tsp ground coriander seeds
¾-1 cup coconut milk
Instructions:
1. Peel and roughly cut carrots, cut onion into quarters, toss in olive oil, roast at 425F for 30-45 minutes
2. Over medium heat in a medium pot add butter and olive oil, sauté garlic, ginger, and paprika for 1-2 minutes
3. Add roasted vegetables, vegetable stock, salt, pepper, and coriander sees, reduce heat to medium low and simmer for 10-15 minutes, turn off heat
4. Blend soup (in blender or with an emersion blender) for 1-2 minutes - or until smooth
5. Return blended soup into the pot, add coconut milk, stir well and serve
