SIMPLE RED Wine JUS Sauce and Bonus

A simple red wine sauce (jus) is a rich, flavourful reduction made by simmering red wine, stock, and aromatics like onions, garlic, and herbs. It’s versatile, slightly tangy, and savoury, with a deep umami taste, perfect for drizzling over steaks, roasts, or vegetables. It’s easy to make, requiring basic ingredients and optional thickening for a glossy, elegant finish. Making a deep red wine sauce is as easy as adding red wine - cooking it down and thickening it up.

Ingredients for 1 Liter
4 tablespoons olive oil
2 medium onions, finely chopped
4 garlic cloves, minced
2 large carrots, finely chopped
4 celery sticks, finely chopped
2 sprigs of fresh rosemary or thyme
2 cups (500ml) dry red wine
4 cups (1 litre) beef or chicken stock
2 tablespoons tomato paste
1 tablespoon Balsamic vinegar
2 teaspoons sugar (optional, to balance acidity)
Salt and freshly ground black pepper to taste
2 tablespoons unsalted butter (optional, for a glossy finish)

Ingredients:
Red wine: 1 cup
Prepared jus: 1-2 cups (depending on the desired quantity and richness)
Shallots: 1 finely chopped (optional for added flavour)
Butter: 2 tablespoons (cold, cubed)
Fresh or dried herbs: Thyme, rosemary, or bay leaf (optional)
Sugar or honey: 1 teaspoon (optional, to balance acidity)
Salt and pepper: To taste

Pressure cook for 40 mins - pressure release naturally for 10 minutes, then do a quick-release blend and sieve.
Stovetop cook for hours
Slow cooker 8-10 hours
