Marble Castella Cake
Square pan 20 cm
Eggs 6
Sugar 70g
Cake flour 95g
Milk 65ml
Whipping cream 30g
Unsalted butter 90g
Honey 25g
Vanilla extract 1 tsp
Unsweetened cocoa powder 1 Tbsp


1. Separate the egg whites and yolks. Add sugar to 6 egg whites and whip until stiff peak forms.
2. Sift the cake flour into another clean bowl. Put milk, whipping cream, and unsalted butter in a saucepan and melt the butter over medium heat. When the butter melts and starts to boil, pour it over the flour and mix well without lumps.
3. Add all the egg yolks to the second bowl. Add honey and vanilla extract and mix.
4. Add the egg yolks batter into the meringue in 3 portions. Transfer half of the batter to another bowl and sift cocoa powder to make chocolate batter.
5. Lay the batter into the pan alternately. Bake in an oven preheated to 160 degrees for about 40-50 minutes in double boiling water.
6. Remove the cake from the pan and allow it cool it down completely.
