Is a $700 pan actually better than a $60 pan? I put the Matfer Bourgeat Copper fry pan ($700) and the Goldilocks Stainless Steel fry pan ($60) through rigorous tests, measuring heat distribution, retention, and real-world cooking performance. While the pricier pan heated more evenly and retained heat better in my controlled tests, the differences in actual cooking were minor. In fact, the $60 Goldilocks pan outperformed the $700 Matfer Bourgeat pan in terms of searing.
