Oil Free Vegan Banana Bread
Serves 6-8 • Total Time: 30 minutes • FODMAP rating: medium
Don’t let overripe bananas go to waste with this recipe. This banana bread is so easy and delicious. Using a blender helps to mix everything together in less than 5 mins. You would never guess it is oil free and vegan. You can always add in chocolate chips, walnuts, or anything else you like.
Ingredients
3 or 4 ripe bananas
1/3 cup of sweetener of choice (I use regular sugar. You can use coconut sugar, maple syrup or even 1/2 cup chopped dates)
1 teaspoon baking powder
1 teaspoon baking soda
1/3 cup of plant milk (I prefer soy milk). Add an additional 1/4 cup if needed after blending.
1 teaspoon vanilla
1 teaspoon cinnamon
1 3/4 cup whole wheat flour (or flour of choice)
Optional Mix-ins
chocolate chips
shredded coconut
walnuts or seeds
fresh berries
Instructions
1.Preheat the oven to 350 degrees. Grease a 9x13 inch pan.
2.Add all of the ingredients except for the flour to a blender. Blend until smooth. Then add the flour and blend. And an additional 1/4 cup of plant milk if the mixtures is too thick. (this will depend on your flour, some whole wheat flours end up with a thick mixture and need more milk, whereas a whole wheat pastry flour may not.) Add in any extra mix ins.
3.Add the mixture to the pan. Option to sprinkle more cinnamon on top and swirl it in for a pretty topping.
4.Bake for about 25 minutes. If using a regular banana bread loaf pan, you will need to bake for about 50 mins. Ovens may vary so keep a eye on it.
5.Remove from the oven and let cool for about 10 minutes before cutting it into pieces.
