Recipe:
Brine:
3 cups room temperature water
2 tbsp salt
2 tbsp sugar
3 tbsp apple cider vinegar
1 tsp whole pepper corns
1 bay leaf
Honey Garlic Pork Chops:
3-4 pork chops
2 tbsp butter
2 tbsp olive oil
4-6 garlic cloves
¼ cup chicken stock/broth
¼ cup honey
2 tbsp apple cider vinegar
Instructions:
1. Mix all the ingredients for the brine until salt and sugar are dissolved. Pour brine over pork chops (in a container or zip lock bag), and let soak in the fridge. Thinner pork chops brine for 30-60 minutes, and thick cut chops brine for 2-3 hours
2. Remove brined pork chops from the fridge, rinse under water, and dry completely with paper towels. Allow them to sit at room temperature for 15 minutes before cooking
3. Heat butter and olive oil over medium high heat, then sear the pork chops for 2-5 minutes per side depending on thickness. Remove from heat and set aside
4. Reduce heat to medium, add garlic and cook for 1-2 minutes, then add chicken stock, honey, and apple cider vinegar.
5. If you have thin pork chops, leave them resting and just allow sauce to reduce for about 4-5 minutes. If you have thick pork chops, add them to the sauce, and finish cooking them while the sauce reduces for 4-5 minutes. Baste the sauce over the top of the chops every 30 seconds or so.
6. Remove your cooked pork chops and allow them to rest for a few minutes at room temperature. You can cook the sauce 1-2 minutes longer if you want it thicker.
