Oreos are a super tasty cookie. No question. But in my line of work, I think of them more as an ingredient than a cookie. So I started wondering: Could I just make my own? The answer is yes and no. Yes, I did make homemade Oreo cookies- but they’re a soft cookie. They don’t have the same crunch as the store bought kind. Am I upset? Not in the least! These soft chocolate sandwich cookies with vanilla filling are scrumptious!
I used my grandma’s tried and true cookie recipe. It’s eggs, oil, and the cake mix of your choice. That’s right. I used a boxed chocolate mix to make my Oreos- and I couldn’t be happier with how they turned out. Now, you might be thinking that this is cheating. And maybe so. But my grandma had five kids- which made baking cookies an exercise in futility. So I for one respect her culinary cunning. (And not to get distracted, but this recipe works with any flavor cake mix you want. You could make this exact same recipe with a lemon cake mix, to create lemon cookie sandwiches, and you would not be disappointed. This recipe is that good.)
This is one of the absolute easiest recipes to make. It’s a three ingredient chocolate cookie that you portion into teeny tiny cookies and bake. And once your cookies are cooling, you whip up a three ingredient filling recipe. Simply pipe the filling onto the flat bottom side of one of the cookies; then assemble the sandwich by pressing a second cookie on top. Done.
