Ingredients:
4 large potatoes
200 g bacon lardons
100 g cheddar cheese (grated)
50 g mozzarella cheese (grated, optional for extra meltiness)
2 tbsp sour cream or heavy cream (optional, for creamier filling)
1 tbsp butter (optional, for mixing with potato flesh)
Salt and pepper to taste
1 tsp olive oil (for brushing)

Preheat the oven to 200°C (400°F)
Bake 45-50 minutes or until they are 60% cooked
Return the stuffed potatoes to the oven and bake for 15-20 minutes or until the cheese is melted and bubbling with golden edges.
