So easy, everything goes on a sheet pan for a flavorful dinner on one pan! You can change up the veggies to what do oh like. All roasted in the oven for a carmelized flavor
Preheat oven to 425°
1-2 packages of kielbasa
3 bell peppers
1 large or 2 small yellow onion
2-4 sweet potatoes
Olive oil & seasoning
Dice the sweet potatoes, mix with 1 tbsp olive oil, 1 tsp each paprika, onion powder, garlic powder. Salt & pepper to taste. Add to the sheet pan and bake for 20 minutes
Meanwhile, Slice the onion, peppers and kielbasa. Add to the sheet pan, drizzle 2 tbsp olive oil, salt and pepper to taste, 1 tsp onion and garlic powder. When the sweet potatoes are done, flip them and put the sweet potatoes back in for another 20 minutes until golden brown and crispy. Add the kielbasa sheet pan to the oven and bake 20 minutes
You can serve this in a bowl as is for a low carb meal, or serve with rice, or my favorite serve the kielbasa with the peppers and onions on a fresh hoagie roll with stone ground mustard and the sweet potatoes on the side
