EASY Individual GINGER and RUM Cakes

Ingredients

For the cakes:
1 ½ cups (190g) all-purpose flour
1 tsp baking powder
½ tsp baking soda
2 tsp ground ginger
1 tsp heaped mixed spice    • British Mixed Spice: Classic Blend fo...   Pumpkin spice works
1 tsp ground cinnamon (if no mixed spice)
¼ tsp ground nutmeg (if no mixed spice)
¼ tsp salt
½ cup (115g) unsalted butter, softened
½ cup (100g) dark brown sugar
¼ cup (85g) black treacle - (molasses optional)
2 large eggs
¼ cup (60ml) dark rum
½ cup (120ml) buttermilk
1 tsp vanilla extract
½ cup (75g) crystallised ginger, finely chopped

For the rum glaze:
¼ cup (60ml) dark rum
2 tbsp unsalted butter
¼ cup (50g) granulated sugar
1 tbsp black treacle
top with crystallised ginger

Preheat your oven to 350°F (175°C).
Bake for 20–25 minutes or until a toothpick inserted in the centre comes out clean.
