Blueberry Iced Baked Donuts
Ingredients:
1/4 cup butter, melted
1/4 cup oil
1/4 cup sugar
2 eggs
2 tsp vanilla
1 tsp lemon or orange zest
1 cup buttermilk
2 2/3 cups all purpose flour
1 1/2 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
Icing:
1/4 cup frozen or fresh blueberries, pureed
3/4 cup powdered sugar
2 tsp heavy cream
Directions:
Preheat oven to 400.
In a large bowl combine all ingredients.
Pipe or spread dough into doughnut pan.
Bake 8-12 minutes, or until a toothpick inserted comes out clean.
Make icing:
Mix icing ingredients together and dip tops of cooled doughnuts in it.
Set them aside to dry.
Pretzels
Ingredients:
1 TB instant yeast
1 1/2 cups warm water
1 TB honey
1/2 TB salt
4 cups all-purpose flour
1 egg
sea salt for sprinkling
Directions:
Preheat oven to 400.
In the bowl of a stand mixer, or with a hand mixer, combine the yeast, water, honey, and salt.
Slowly add the flour.
Pinch off golf ball size pieces of dough and shape into pretzels.
Make egg wash by whisking the egg with a tablespoon of water.
Brush egg wash onto pretzels and sprinkle with salt.
Bake for 13-15 minutes
