Recipe
Ingredients:
2 cups watermelon juice (strained)
1/2 cup cornflour
1/2 cup sugar (adjust to taste)
2 tbsp ghee
Chopped nuts (almonds, cashews, pistachios) for garnish
Instructions:
1. Prepare Watermelon Juice
Blend watermelon pieces and strain to get about 2 cups of juice.
2. Mix Cornflour and Watermelon Juice
In a bowl, mix cornflour with the watermelon juice. Make sure there are no lumps and the mixture is smooth.
3. Cook the Halwa
Heat a non-stick pan and add the watermelon-cornflour mixture & little ghee. Cook on medium heat, stirring continuously to avoid lumps.
4. Add Sugar and Ghee
After the mixture thickens slightly, add sugar and ghee. Continue cooking while stirring.
5. Add chopped nuts
Once the mixture becomes glossy add chopped nuts and mix well.
6. Serve
Pour the halwa into a greased tray and spread evenly.
Allow it to cool and set. Once firm, cut into desired shapes and serve.
