This is how you make traditional Charred Eggplant Baba Ganoush.
Step 1: Char Your Eggplant
Over an open flame, carefully rotate your eggplant until all sides are evenly charred.
Place on a dish, cover, and let things steam so the interior is soft. Peel away the skin from the meat and add it to a bowl for later.
Step 2: Make Your Base
To a mortar or a durable cutting board, smash garlic cloves and green chilis with a little salt until you have a smooth paste.
Add this to your eggplant along with some lemon juice and tahini and smash well until you have a creamy consistency.
Step 3: Garnish and Enjoy
Add pomegranate seeds, olive oil, parsley, and some pomegranate molasses. Serve with warm pita for an unbelievable experience.
