Today's recipe is dum aloo
Ingredients
Baby potatoes 12 nos
Water as required
Salt as per taste
For onion paste
Onion 2 nos
Green chilli 2 nos
Dry red chilli 2 nos
Garlic 8-9 cloves
Saunf 2 tsp
Cumin 1/4 tsp
Cashews 6-7 nos
Turmeric 1/4 tsp
Water 2-3 tbsp
Tometo puree
Tometo 3 nos
Water as required
Oil 1/2 tbsp
Turmeric 1/4 tsp
Red chilli powder 1/4 tsp
Oil 2.5 tbsp
Cumin 1/4 tsp
Cinnamon 3 sticks
Cloves 5 nos
Cardamom 3 nos
Bayleaf 2 nos
Turmeric 1/4 tsp
Red chilli powder 1/2 tsp
Salt as per taste
Cumin coriender powder 1/2 tsp
Amchur powder 1/4 tsp
Sugar 1 tsp
Kasuri methi 1 tsp
Hot water 1/2 cup
Ghar ni Malai 1 tbsp
Coriender leaves
Method
1.In pressure cooker add potato, salt and water, pressure cook it upto 3 whistle.
2.In jar add onion, green chilli, red chilli, garlic, saunf, cumin, cashews, turmeric and water, grind to fine paste.
3.In pan add tometo and water, cook it well, then allow it to cool and grind to make a fine paste.
4.In pan add oil, then add boiled and peeled baby potato, turmeric and red chilli powder, saute it for 2-3 min.
5.In pan add oil, then add cumin, cinnamon, cardamom, cloves and bay leaf, once it get aromatic, then add prepared onion paste.
6.cook it until oil releases from sides, then add turmeric, red chilli powder, cumin coriender powder, amchur powder, mix welll, add tometo puree and cook it nicely
7.Add salt, sugar, kasuri methi and hot water, mix it well, add sauted baby potatoes, and cook it on slow flame for 5 min,.
8.Lastly oil releases from sides, add ghar ni malai and coriender leaves.
9.Dum aloo is ready to serve, enjoy it with naan, paratha, and rice.
